Chicken, Rice and Veggies

Preheat oven to 375 degrees.

In a large casserole dish, add the rice, taco seasoning, salt, pepper and chicken stock. Stir until taco seasoning is dissolved.

Add the chicken and give another stir.

Add all the vegetables and give a final stir.

Cover with aluminum foil and place in the preheated oven for 40 minutes. Remove and stir. Place back into the oven for another 10 - 15 minutes, or until rice is tender.

Remove from oven and allow to cool before placing into 4 equal-sized meal prep bowls.

Refrigerate bowls to use for your next 4 meals.

Freeze meals not intended to be eaten within the next 3 days.
